Monday's Harvest

I went out to the garden yesterday and came in with all this food!
Our zuchinni and summer squash plants are going crazy.
I need to find some good recipes now!

My all-time favorite way to fix squash and/or zucchini is this:

Put a little olive oil and butter in a huge skillet. Add chopped onion, squash/zucchini and cook until tender. When translucent and cooked, add cut tomatoes. They only take a few minutes to cook. Then add a handful of shredded cheddar cheese until melted. And, voila! It's done.

I love to dice them up, put them in a bowl, season with olive oil (no butter) S and P and some garlic powder. Then add some parmesan cheese then grill them up on a pan. YuMMmmO!! Cook them but with a little crunch still.... :)
